Chef Bob is the current President of the Professional Culinaire Association (Malaysia) but his food journey began when he was just 18 years old at Petaling Jaya Hilton, which was where he first developed a profound passion for cooking.

After getting his start at The Hilton, Chef Bob worked on cruise ships with Royal Viking and Sea Bourn Cruises before moving on to Jebel Dhanna Resort Abu Dhabi, UAE and Khartoum, Sudan for 2 years.

 

Upon gaining experience, he returned to the Malaysia in 2003 and worked at several 5-star hotels in Kuala Lumpur including The Westin and Mandarin Oriental. Chef Bob joined Sheraton Imperial Kuala Lumpur as Chef de Cuisine in 2008, and was appointed its Executive Chef in 2016.

Following that, Chef Bob worked as a Corporate Executive Chef with MAS Awana Sdn Bhd before he switched to his current career as a full-time consultant chef and host of his own cooking show, Chef Bob Cooking.

ABOUT CHEF'S RECIPE:

LAMB KEBAB WITH
FRUITS ROJAK

In this video, Chef Bob shares how you can create juicy Lamb Kebab using Australian minced lamb as the main ingredient. Watch how he adds a twist to this famous Middle Eastern dish by serving it with traditional fruits Rojak. An unexpected pair, yet tastes amazing together.

INGREDIENTS:

For Lamb Kebab

  • 700g Australia boneless lamb, minced

  • 2 stalks Coriander, finely chopped

  • 200g Yellow Onion, chopped

  • 2 cloves Garlic, chopped

  • 2 tsp Cinnamon powder

  • 2 tsp All Spice powder

  • 4 tsp Chili powder

  • Salt to taste

  • Cooking oil

  • Skewers (soaked in water overnight)

For Rojak

  • Cut the following fruits & vegetables into ½ inch cubes: Pineapple (remove core),  Raw mango, GuavaGreen apple, Cucumber (remove core) Young turnip

For Rojak sauce

  • 500g Thick tamarind juice

  • 1/2 tbsp Palm sugar

  • 1 tbsp Chili paste

  • 1/2 tbsp Prawn paste (Belacan)

  • 3 tbsp Sambal sauce

  • 3 tbsp Tomato sauce

  • 50ml Kecap manis

  • 2 tbsp Ground nuts, finely chopped

  • 1 tsp Sesame seeds

METHOD:

To make Lamb Kebab

  1. Mix all ingredients together and keep in chiller for 1 hour before skewing the meat on skewers.

  2. Add some oil to a hot grill or pan.  When oil is hot, place skewers on the hot grill.

  3. Turn skewers few times to cook all sides well and golden brown. 

  4. Serve with Rojak Fruits.

To make Rojak Fruits

  1. Mix in all ingredients for Rojak sauce. 

  2. Add cut fruits & vegetables and mix into the sauce.
