Lamb Me Your Recipe:

Lamb Satay

Preparation: 10 minutes

Cooking time: 25 minutes

Directions

  1. Dice the lamb in 2-3 cm pieces. 
     

  2. Marinade: blend birds eye chillies, shallots, peanuts, pepper, sugar and shrimp paste. Move to a bowl and add kecap manis, water, lime leaves and lime juice. 
     

  3. Marinade the lamb in the refrigerator for 15 minutes.
     

  4. Alternate  threading lamb and capsicum onto skewers. 
     

  5. Grill the satay skewers and baste with marinade. Grill to preferred level of doneness. Serve satay with condiments or garnish.

  • 500 grams of lamb, small dice

  • 2 limes

  • 1 red bell pepper

Marinade Ingredients

  • 1 teaspoon shrimp paste

  • 1 teaspoon white pepper

  • 1 tablespoon sugar

  • 5 shallots

  • 5 kaffir lime leaves, sliced

  • 2 limes

  • 1 tablespoon peanuts, fried

  • 5 birds eye chillies, boiled

  • 200 ml of kecap manis (sweet soy sauce) to taste

  • 50 ml of water
