About

Chef Mauro

Italian Chef Mauro Sanna helms the new Prego, bringing with him over 40 years of culinary experience.

 

Originally from Sardinia, an Italian island in the Mediterranean Sea with over 2,000km of coastline, Chef Mauro grew up in a family that has a great passion for fresh produce and ingredients.

 

Growing up, he was readily surrounded with seasonal produce obtained from his father’s farm and the freshest seafood from the coast.

Chef Mauro was deeply inspired by his mother, whom he shared was very experimental and innovative in her dishes. The fond memories of preparing sumptuous spreads with his mother led to him attending culinary school at 14 years old. He later went on to pursue a culinary career at one of the luxury hotels where his professional chef and lecturer worked. Prior to joining Prego at Fairmont Singapore, Chef Mauro led the team at Cucina in JW Marriott, Dubai for close to two years.

Chef Mauro believes that one should always take pleasure in food, a philosophy that he has held to since young. He takes reference from the movement ‘Città Slow’ in Italy, also known as Slow Cities, which places emphasis on the concept of good living and how a place should be pleasant to live, work and spend leisure time in. Akin to how quality ingredients need to seamlessly come together to make a good plate of pasta and pizza, Chef Mauro aspires for Prego to have all elements that makes it a pleasant Italian restaurant to spend leisure time with loved ones and friends.

A firm believer in bringing out excellence through his food and with an unwavering approach to fresh produce, Chef Mauro hopes to bring his heartfelt culinary passion through timeless Italian classics to Prego diners. His handcrafted pasta made daily embodies this passion, along with the time-tested, traditional culinary methods and techniques used in making the authentic and decadent spread at Prego.

Chef Kurt Sombero of Meatsmith Little India comes barbecue Lamb Ribs, with a unique Indian twist. The lamb ribs are first marinated for 36 hours, smoked for 8 hours and then grilled with a berry glaze. Spices are also used to give the ribs a distinct kick.
